We have struggled to find an appropriate way to celebrate Il Giorno di San Pasquale. And we realize that as the years pass we have fewer chances left to get it right.

So we've accelerated our research this year, focusing on artisan Irish goods like the one referenced in our photo today. I believe you call them greens, although they are a different shade than what you find at a farmers market.

The product of a family business, this product was appropriately bottled in green glass. Which, come to think of it, this text should imitate, too.

The artisans describe the pains they take:

Well, first we take the best of pot still and fine grain whiskeys. Then we triple distill them -- not because we have to -- but because we want to, as it gives it its signature smoothness. Finally we age them in oak casks for a minimum of four years.

We are impressed with the description of the work involved, which seems mainly to be waiting. The perfect activity if you find yourself working on a Sunday.

For ourselves, we'll wait until tonight. That isn't four years but it is a leap year, which takes four years to come around itself. Should suffice.

And when the hour comes, we'll raise a glass of the stuff to toast the old snake charmer (in Italian). Salute!
